I have a great amount of respect for chefs like Michael Schwartz, who experience enormous success and resist the urge to open a new restaurant in some fancy hotel where eight restaurants before it have failed or to act as “consulting chef” for an airline. I guess that is a difficult urge to fight since oftentimes successful chefs expand for the sake of expansion.

(A little info for those who haven’t heard. The Villa by Barton G is supposed to be the new restaurant at Casa Casaurina. And Ola Cuba is a new Douglas Rodriguez restaurant set to open at the renovated Gulfstream.)
