Why Be A Chef When You Can Be A Restauranteur?

Pop quiz: Do any Miami chefs have just one restaurant these days?

Bernstein? Two.

Ken Lyon? Two.

Eismann? Four (Maybe Six).

Pietro Vardeu? Two.

Michael Schwartz?  ONE!  Errr, nevermind. (Plus the one opening in Grand Cayman.)

Cindy Hutson is also opening an Ortanique in Grand Cayman, so she’s out.

How about Pascal Oudin (Pascal’s on Ponce)?  Yes, there’s one.

All of the sudden, chefs like Romeo Majano (Romeo’s Cafe) and Kevin Cory (NAOE) seem like paragons of restraint.

Not that quantity is necessarily a bad thing, but it seems like every chef needs an empire these days.

You forgot Michelle Bernstein also has Omphoy in Palm Beach and MB at the Aqua in Cancun.
